History of Chocolate--Harrison's Assignment

  • Chocolate was known in 1100 BC if not sooner.
  • Majority of Mesoamerican people(Maya and Aztecs) made chocolate beverages.
  • Been cultivated for three millennias in Central America and Mexico.
  • Also used the white pulp9around the cacao bean) as a source of fermantable sugars for an alcholic drink.
  • Cacao pods are harvested, the beans with their surrounded pulp are moved to bins for ferment. The fermentation gives them the familiar taste. Then they are dried and transported for the plantation to a manufactoring building where they are cleaned, roasted, and graded. The shells are removed to extract nib, finally the nibs are ground and liquidfied.
  • In 1765 the U.S. was introduced.
  • My favorite I guess would be Guittard.
